Ever popular, this simple recipe demonstrates the versatility of mince as a stuffing.


Serves 4

4 beef tomatoes

7.5ml/1 ½ tsp oil

75g/3oz/ ¼ cup minced beef

1 small red onion, thinly sliced

25g/1oz/ ¼ cup bulgur wheat

30ml/2 tbsp cashew nuts, chopped

1 small celery stick, chopped

Salt and ground black pepper

Crisp green salad, to serve

1 Trim the tops from the tomatoes, scoop out the tomatoes and reserve.

2 Place the oil in a large microwave proof bowl, add the minced beef and onion, cover and microwave on HIGH for 5-6 minute or until the beef is cooked, stirring twice to break up the meat. Stir in the tomato flesh.

3 place the bulgur wheat in a bowl, cover with boiling water and leave soak for 10 minutes. Drain if necessary.

4 Mix the mince and bulgur, parmesan cheese, nuts and celery. Season well.

5 Spoon the filling into the tomatoes and place in a shallow microwave proof dish .Microwave on HIGH for 3-5 minutes or until the tomatoes and their filling are tender. Serve with a crisp green salad.
