The lime or lemon juice and cayenne add piquancy to this dish.

INGREDIENTS

Serves 4

450g/1lb cod fillet, skinned

15 ml/ 1 tbsp lime or lemon juice

10 ml /2 tsp olive oil

1 onion, finely chopped

1 green pepper, seeded and sliced

2.5 ml/ ½ tsp cayenne pepper

2.5 ml/ ½ tsp garlic salt

400g/ 14 oz can chopped tomatoes

1 Cut the cod fillet into bite-sized chunks and sprinkle with the lime or lemon juice.

2 Place the olive oil, onion and pepper in a large microwave-proof bowl. Cover and microwave on HIGH for 3 minutes, stirring once. Add the cayenne pepper and garlic salt.

3 Stir in the cod with the chopped tomatoes and cover. Microwave on HIGH for 8-10 minutes, stirring twice, until the fish is cooked and flaked easily. Sever with boiled rice or potatoes.

COOK’S TIP

Be careful not to overcook the fish – or to let it bubble too vigorously in the sauce – as the chunks will break up.
